Can anyone talk me through how spam filtering works under the bonnet (hood)?

My problem is that I am starting to get a lot of spam from myself (see image). Interestingly, it is not all treated the same way...some is marked as SPAM and some is not. Either way, greylisting, blacklisting or whitelisting are not going to work.

My setting for spam scoring is set at Default. I am nervous of fiddling with this, because of the increased risk of false positives...Greylisting already adds a lot time to getting some emails, like when you sign up to something on an impulse and you end up waiting twenty minutes for email, and it feels like too much trouble to go to control panel to whitelist the domain (is there and easier/quicker way to do this?)

I realise that spam filtering cannot be an exact science but my curiosity is piqued by the inconsistency of how identical emails are treated
